Fluids in Food Processing

Learning Outcomes

At the end of this module, you will be able to:

  1. describe a fluid and its characteristics related to its flow
  2. describe density and viscosity of fluids
  3. identify different terms used to express pressure in fluids

In a food processing plant, liquid or solid foods are frequently conveyed from one location to another to accomplish various processing operations. In this module, we will view examples of fluid handling in a processing plant. In the first video, you will also learn about the essential characteristics of fluids that influence their flow.

In the next video, you will gain an understanding of density, specific gravity, and specific volume of fluids.

Viscosity is another critical property of fluids. In the next video, we will obtain a mathematical expression to describe the viscosity of liquids and gases. The mathematical derivation will be carried out in its entirety to gain a good understanding of the various terms that influence the viscous characteristics of a fluid.

Finally, we will examine various terms used to express pressure in fluids. In the next video, you will learn what different terms used to describe pressure mean.

Recap

In this module, you learned the characteristics of fluids that influence their flow. You learned about two physical properties of fluids, namely density and viscosity. Pressure plays a vital role in the flow of fluids; you learned different terms used in expressing pressure and its various manifestations.
